Maybe it just me but I feel like it gives me a good intuition. It describes an algorithm: for any n sided convex polygon I can construct a set of lines parallel to each of the sides which intersect at a single point, like a pinwheel. It pretty straightforward to prove that each of the angles in the pinwheel is congruent to one of the exterior angles of the polygon, the correspondence as in the gif. And the pinwheel angles obviously sum to 360 degrees. Done.
